Ingredients
  • 800 g Peeled tomatoes
  • 1 pc Yellow onion
  • 50 g Red wine vinegar
  • 6 g Garlic
  • 5 g Salt
  • 1 tsp Yellow Mustard
  • 3 g Cayenne pepper
  • 2 g Pepper
  • 1/2 tsp Allspice
  • 1 pc Bay leaf
Instructions
  1. Finely dice small yellow onion and garlic.
  2. Heat the olive oil in a medium pot over medium heat. Add the onion and cook until soft and lightly golden. Add the garlic and cook briefly until fragrant.
  3. Stir in the allspice, black pepper, and ground cayenne. Toast gently for a few seconds to release their aromas.
  4. Add the red wine vinegar, canned peeled tomatoes, sugar, salt, and bay leaf. Stir well to combine.
  5. Bring the mixture to a gentle simmer and cook uncovered for about 25 to 30 minutes, stirring occasionally, until thickened.
  6. Remove the pot from the heat, stir in the mustard and discard the bay leaf.
  7. While the ketchup is still hot, blend with an immersion blender until completely smooth.
  8. For an extra-smooth texture, strain the ketchup through a fine-mesh sieve into a clean bowl.
