  1. **Suva mešavina:** U velikoj posudi za mešanje, umuti tapioka skrob i so dok se ne sjedine. **Priprema rerne i pleha:** Zagrej rernu na 200°C i obloži pleh papirom za pečenje.
  2. U šerpi na srednje jakoj vatri, dovedi vodu, ulje i mleko do ključanja. Pažljivo prati kako tečnost ne bi iskipela.
  3. Pažljivo sipaj ključalu tečnost direktno preko tapioka skroba. Odmah mešaj dok skrob potpuno ne upije tečnost i dok se ne formira grudvasto testo. **Napomena:** Testo će u ovoj fazi izgledati neujednačeno i želatinasto - to je potpuno normalno.
  4. Ostavi smesu sa strane da se hladi oko 10 minuta. Potrebno je da bude dovoljno hladna da možeš komotno da je mesiš rukama, a opet dovoljno mlaka da ne skuva jaje u sledećem koraku.
  5. - Dodaj jaje u ohlađeno testo i dobro ga umesi dok se potpuno ne sjedini. (Testo se u početku može odvajati, ali samo nastavi da mesiš i spojiće se). - Dodaj gaudu i parmezan. Nastavi sa mešenjem dok ne dobiješ glatko, kompaktno testo i dok se sir ravnomerno ne rasporedi. - Pokrij testo i ostavi ga da odmori 30 minuta. Na ovaj način tapioka skrob može da upije vlagu, a testo će se lakše oblikovati.
  6. Podeli testo na porcije od oko 60 g. Svaki komad valjaj među dlanovima dok ne dobiješ glatku, čvrstu lopticu. Poređaj ih na pripremljen pleh, ostavljajući malo razmaka između svake loptice.
  7. Peci otprilike 25 minuta, ili dok loptice lepo ne narastu i ne dobiju blago zlatnu boju. Posluži toplo.
