Classic Caesar Salad with Grilled Chicken

Some dishes earn their place on every menu for a reason. The Caesar salad is one of them - a deceptively simple combination of crisp romaine, salty Parmigiano Reggiano, golden croutons, and that unmistakably bold, creamy dressing that somehow makes everything better. Add tender grilled chicken and you have a complete meal that never gets old.

What makes this recipe stand out is how easy it is to put together. With just a handful of ingredients, you can have a restaurant-quality salad ready in minutes. It’s ideal for busy days when you want something quick but still homemade and full of flavor.

This Caesar salad works perfectly as a light lunch, a quick dinner, or even as part of a larger meal. You can keep it classic or customize it with extras like crispy bacon, soft-boiled eggs, or extra black pepper for a bit more depth.

If you already have homemade Caesar dressing and croutons prepared, this becomes even faster - making it a great go-to recipe for everyday cooking. If you don’t have Caesar dressing or croutons on hand, you can easily make them at home using our simple recipes on the blog.

Tips for the Best Caesar Salad

  • Keep it Cold
For the crispest texture, keep your lettuce in the fridge until the very moment you are ready to chop and serve.
  • Homemade Touch
If you have five extra minutes, try making your own croutons.
  • Add Variety
While chicken is the classic choice, this salad also works beautifully with grilled shrimp or even a hard-boiled egg for a different protein boost.
  • Use the real thing
It's tempting to reach for pre-grated Parmesan in a tub, but a block of genuine Parmigiano Reggiano makes a noticeable difference. Grate it fresh or shave with a vegetable peeler for dramatic curls and deeper flavor.
  • Serve straight away
Caesar salad waits for no one. Once dressed, the lettuce starts to wilt within minutes. Plate it immediately and eat it fresh - this is not a make-ahead dish.

Ingredients
  • 2 heads Romaine lettuce
  • 150 grams (5¼ ounces) Grilled chicken breast
  • 120 grams Classic Caesar Dressing
  • 50 grams (1¾ ounces) Parmigiano Reggiano
  • 40 grams (1 cup) Croutons
Instructions
  1. Start by placing the chicken breast between plastic wrap and flattening it with a meat hammer to ensure an even thickness. Season both sides with salt and slide it into the fridge. Let it rest while you prepare your other ingredients; this keeps the meat incredibly juicy.
  2. While the chicken rests, wash the romaine lettuce thoroughly in cold water. Dry it well - using a salad spinner is best - to ensure the dressing sticks to the leaves. Chop the heads into manageable pieces.
  3. Take the chicken out of the fridge and use a kitchen towel to remove all excess moisture from the surface. Fry in a pan until golden on both sides. Let it rest for a few minutes before slicing.
  4. In a large mixing bowl, combine the chopped romaine and Caesar dressing. Toss gently until every leaf is lightly coated.
  5. Add the shaved or grated Parmigiano Reggiano and toss again. The cheese melts slightly into the dressing and adds a nutty, salty depth.
  6. Scatter the croutons over the top. Keep them on the surface so they stay crisp rather than getting lost in the dressing.
  7. Finish with sliced grilled chicken arranged on top and more Parmigiano Reggiano shavings. Serve immediately while everything is fresh and the croutons still have their crunch.
