Like some of our favourite dishes, this recipe was born out of a classic kitchen crisis: staring into a seemingly empty fridge while desperately craving a comforting bowl of pasta.

All we really had was a stray zucchini and those humble staples almost every kitchen keeps around - an onion and a few garlic cloves. It didn't look like much.

But instead of settling for a basic stir-fry, we decided to experiment. We tossed everything onto a baking tray, roasted it until tender and caramelised, then threw it into the blender with a scoop of Greek yogurt and some fresh herbs.   1. Prebaci pečenu tikvicu, luk i beli luk pravo u blender. Dodaj grčki jogurt, sveže ceđen limunov sok, listiće nane, još jednu kašiku maslinovog ulja i prstohvat soli i bibera. Blendaj na najjačoj brzini dok ne dobiješ potpuno svilenkast, kremast i jarko zeleni sos.
  2. Stavi veliku šerpu posoljene vode da proključa i skuvaj taljatele prateći uputstvo sa pakovanja. Ne yaboravi da sačuvaš malo vode u kojoj se pasta kuvala pre nego što ocediš pastu! To je tajni sastojak koji kasnije razređuje sos.
  3. Dok se pasta kuva, iseci pečurke na četvrtine. Zagrej malo maslinovog ulja u velikom tiganju na srednje jakoj vatri. Ubaci pečurke i ostavi ih da se prže par minuta bez mešanja - tako će pustiti višak tečnosti i dobiti savršenu, zlatno-braon koricu. Na samom kraju ubaci grančice majčine dušice na minut-dva da puste aromu u ulje.
  4. Smanji vatru na najslabije i sipaj zeleni sos od tikvica (ili ubaci tvoje zamrznute kockice sosa!) pravo u tiganj sa pečurkama, pa mešaj dok se sve ne ugreje i postane kremasto. Ubaci oceđene taljatele i sve dobro promešaj da se pasta ravnomerno obloži sosom. Ako ti deluje previše gusto, sipaj malo one sačuvane vode od paste dok ne dobiješ savršenu teksturu.
  5. Izvadi i baci grančice majčine dušice. Umešaj obilnu količinu sveže narendanog Parmigiano Reggiano sira i mešaj dok se potpuno ne otopi u sosu.
  6. Posluži odmah, dok je pasta još vruća i kremasta. Preko svake porcije dodaj još malo narendanog parmezana, prstohvat ljute tucane paprike i par preostalih listića nane radi dekoracije.
