    • 2 tbsp Cajun seasoning
    • 15 g Butter
    • 1 tbsp Olive oil
    • 1 slice Lemon
    • 1 pc Bay leaf
    • 1/2 tsp Fennel
    • 1 pinch Parsley
    Instructions
    1. Peel the onion and trim the root end slightly so it sits flat. Using a small knife (paring knife), carefully remove a small portion from the center to create a well for the butter and seasoning.
    2. Place the onion in the center of a large sheet of aluminum foil. Place the butter into the hollowed center.
    3. Using a mortar and pestle, grind fennel seeds until fragrant and crushed. Sprinkle evenly over the onion.
    4. Coat the onion generously with the Cajun seasoning and drizzle with olive oil.
    5. Poke the sides of the onion with your knife and gently massage in the seasoning. Top with a lemon slice and tuck the bay leaf in beside it.
    6. Fold the foil upward and crimp the edges tightly. Ensure there are no gaps; you want to steam the onion in its own juices to keep it tender.
    7. Cook at 180°C (350°F) for 40 minutes. The onion is done when it feels soft when pierced with a knife.
